Many parents prepare children's lunches (and their own) in advance, on Sunday, just before the madness of the week begins.

It's a good way not to get caught off guard the day before by wondering "What am I going to put in their lunch bags?"

Prepare everything in large quantities and you will have enough leftovers to feed the whole family!

Monday: Cauliflower Wrap

  • 1 cup roasted cauliflower
  • 1/3 cup roasted curried tofu
  • 1/4 cup cooked quinoa
  • 1/4 cup of kale in julienne
  • Fresh coriander
  • 2 rice leaves

Spicy coconut sauce

  • 1/2 cup plain coconut yogurt
  • 1 teaspoon sriracha
  • 1/2 pressed lime
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste

Tuesday: Greek salad with quinoa and eggplant

  • 1 small grilled eggplant
  • 1/2 cup cooked quinoa
  • 1/2 cup sliced cherry tomatoes
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped red onion
  • 4 Kalamata olives
  • 1 teaspoon olive oil
  • Greek style seasoning
  • Lemon
  • Salt and pepper to taste

Tzatziki sauce

  • 1/2 cup plain coconut yogurt
  • 1/2 cup grated cucumber
  • 1 clove garlic minced
  • 1/2 lemon squeezed

Wednesday: Thai style lettuce wrap

  • 1/3 cup grilled tofu
  • 1/2 cup cooked quinoa
  • 3 leaves of lettuce
  • 1 cup of kale in julienne
  • Sliced peanuts
  • Fresh coriander

Creamy cashew nut vinaigrette

  • 1/2 cup unsweetened cashews
  • 1/2 cup cashew butter
  • 1 tablespoon tamari sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh ginger
  • 1 clove of garlic
  • 1/2 pressed lime
  • Salt and pepper to taste

Thursday: Asian salad with kale and mango

  • 1/2 cup cooked quinoa
  • 1/3 cup cooked tofu
  • 1 mango cut into cubes
  • 1 1/2 cup of kale in julienne
  • Fresh coriander
  • 1 tablespoon cashew pieces
  • 1/4 cup creamy cashew vinaigrette, prepared Wednesday

Friday: Creamy pasta with peas and mint pesto

  • 1 cup cooked pasta
  • 1/2 cup sliced cherry tomatoes
  • 1/2 cup sliced cucumber
  • 1/4 cup of corn
  • 1/4 cup of sauce (below)

  • 1/2 cup plain coconut yogurt
  • 1/4 cup of nuts
  • 1/4 cup fresh mint
  • 3/4 cup fresh basil
  • 1/3 cup sweet peas
  • 1/4 cup olive oil
  • 1/2 lemon squeezed
  • 2 cloves garlic
  • Sea salt and pepper to taste
