It is finally summer time! That also means melon season! Here are 8 recipes to enjoy this fruit differently. 

1. Melon, mozzarella and ham salad

Using a melon spoon make small balls, add mozzarella balls and slices of ham on a beautiful serving plate. Sprinkle with mint and fresh basil. Then prepare vinaigrette with 3 tablespoons of olive oil, a tablespoon of honey and a tablespoon of balsamic vinegar. Add salt and pepper to taste.

2. Melon Sorbet 

Prepare a syrup with 1 glass of water and 1 glass of sugar then put in the refrigerator until very cold. In a blender, mix 4 glasses of melon cubes, the syrup and the juice of a small lemon until smooth. Freeze the preparation until it is firm and serve. Enjoy!

3. Cucumber, melon and avocado salad

6. Melon popsicle

7. Fresh melon juice

Blend 2 medium sized melons until a puree is obtained. Pass through a sieve to separate the pulp from the juice. Freeze the pulp in the ice cube tray. Pour the juice into a large pitcher, add 3 glasses of water and 3 tablespoons of lemon juice. Sweeten as desired and put in the refrigerator. Serve with the ice cubes made from the pulp.

8. Melon gazpacho

Cut two melons in half, remove the pulp and leave the skin intact (it will serve as a bowl). Add half an onion, a peeled cucumber, salt and 15 g of vinegar. Blend until a fine puree is obtained. Add 140 ml olive oil and emulsify. Serve cold with pieces of dry ham.
