The Spatchcock technique consist of splitting and flattening a chicken. This is give you a moist breast, perfectly cooked dark meat and cut down the cooking time considerably! 

Since more skin will be exposed, that means more crispy delicious skin! It is also totally customizable with your favourite ingredients. 

Here's how to.

1. Prepare the chicken 

Place the whole chicken with breast side down, on your work surface or a large cutting board.

2. Cut the chicken

Using kitchen scissors or a sharp knife, cut along one side of the backbone starting at the thigh end.

3. Remove the backbone 

Cut along the other side of the backbone and remove. You can keep to make chicken stock or simply discard.

4. Flatten the chicken

Turn the chicken the other side and open it on your work surface. Firmly press on the breastbone to flatten the bird. You are done!
