Why would you eat a simple chocolate cake when you can enjoy a 4-in-1 chocolate cake?

This amazing dessert is composed of 4 types of flavors and textures. It's like eating 4 different cakes in one bite!

This extraordinary cake is for 12 servings. A gourmet project for the weekend!

Ingredients

  • 10 graham crackers, crushed
  • ¾ cup (150 g) granulated sugar, divided
  • 3 tablespoons (45 ml) granulated sugar
  • ⅓ cup (40 g) cocoa powder, plus 4 tablespoons (60 ml) cocoa powder, divided
  • 14 tablespoons (210 ml) unsalted butter, plus 1 3/4 sticks, melted, divided
  • 4 large eggs
  • 1 teaspoon (5 ml) vanilla extract
  • ½ cup (60 g) all-purpose flour
  • 2 cups (480 mL) whole milk
  • ½ teaspoon (2.5 ml) cream of tartar
  • 1 ½ cups (360 ml) heavy cream
  • 2 tablespoons (30 ml) powdered sugar

Directions

Preheat the oven to 350˚F (180˚C). Line a 20 cm (8 inch) square baking pan with parchment paper.

In a large bowl, mix the crumbs of graham crackers, 3 tablespoons of sugar, 2 tablespoons of cocoa powder, and 6 tablespoons of melted butter until fully incorporated. The mixture should look very rich and chocolatey.

Transfer the mixture into the mold by pressing to fill the bottom of the mold.

Bake for 10 minutes, then let cool.

Reduce the oven temperature to 325˚F (160˚C).

Separate the eggs in two large bowls.

Add the remaining ¾ cup (150 g) sugar to the egg yolks and whisk until the mixture turns pale yellow.

Add the remaining 8 tablespoons of melted butter and vanilla and mix until fully incorporated.

Sift the flour and ⅓ cup (40 g) cocoa powder, and mix well.

Slowly add the milk, stirring continuously, until a very wet batter forms.

Beat the egg whites with a hand mixer until frothy. Add the cream of tartar and continue to beat until medium peaks form.

Whisk a third of the egg whites into the egg yolk batter, then gently fold in the remaining egg whites with a rubber spatula.

Pour the batter over the graham cracker crust and bake for 40 minutes. Let cool for at least 1 hour.

In a large bowl, whip the heavy cream until soft peaks form and the cream has doubled in volume.

Sift the remaining 2 tablespoons cocoa powder and powdered sugar and stir with a rubber spatula.

Invert the cooled cake on a cutting board. Remove the parchment paper and flip the cake again so the graham cracker crust is on the bottom.

Spread the chocolate whipped cream on the cake.
