With the cool temperatures, you can have fun with an excellent soup recipe ... Carrots, apples and ginger.
3 tablespoons olive oil
1 sliced onion
1 clove garlic minced
2 tablespoons fresh ginger
1 apple, peeled and sliced
4 cups sliced carrots
4 cups vegetable broth
A pinch of nutmeg
salt and pepper
In a saucepan, heat the olive oil and add the onions and cook for 5 minutes.
Add ginger and garlic and cook 1 minute.
Add apple slices and carrots cut in dice, then cook for 3 minutes.
Stir in vegetable broth and bring to a boil.
Simmer 30 minutes then let cool for 10 minutes before blending.
Put back in the saucepan, add a little nutmeg, salt and pepper.
