Comforting and delicious recipe: chicken breast stuffed with vegetables and cheese.

You no longer know how to make chicken and you really want to change up your meals? Struggling to get your kids to eat vegetables? Are you looking for comfort in this period of confinement?

Here is a suggestion for you! Try this chicken stuffed with vegetables and cheese!

Ingredients:

  • 3 large chicken breasts
  • 1 and a half teaspoons (7.5 g) garlic powder
  • 1/2 cup (125 g) diced red pepper
  • 1 cup (250 g) broccoli, cut into small florets
  • 1 cup (250 g) cheddar cheese
  • 1 tablespoon (15 ml) mayonnaise
  • 2 tablespoons (30 ml) olive oil
  • 1/4 teaspoon paprika
  •  salt and pepper, to taste

Note: you can also add your favourite vegetables (asparagus, cauliflower, etc.)

Preparation:

1. Preheat the oven to 425 °F (218 °C).

2. Season both sides of the chicken breasts with salt, pepper, paprika and 1/2 teaspoon  garlic powder.

3. Using a shard good knife, slice the chicken breast in half, without going all the way, to create a pocket.

4. Combine the rest of the ingredients, except the oil, in a bowl.

5. Stuff the chicken breasts with the mixture and keep the breasts closed with a toothpick to hold everything in place.

6. In an ovenproof pan, add the olive oil and heat over high heat on the stove.

7. Sear the chicken on both sides.

8. Cover with aluminum foil and place in the oven for 15 to 17 minutes, or until the chicken reaches 165 °F.

9. Let sit 5 minutes before serving.
