The smell released when cooking these muffins is fantastic! I promise you happy children on their return from school.

Ingredients

  • 1/4 cup cocoa powder
  • 2 tablespoons oatmeal
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsweetened applesauce
  • 1/4 cup Greek vanilla yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1 egg
  • 5 tablespoons dark chocolate chips

Preparation

Preheat the oven to 350 degrees F, butter 9 of the 12 cups of a muffin pan and add water to the remaining 3 compartments.

In a large bowl, mix the cocoa powder, oatmeal (reduce regular oat flakes into flour - make sure to measure the oats after having reduced to flour), the baking soda, the baking powder, the salt and the brown sugar.

In a second bowl, mix peanut butter (do not heat), applesauce, Greek yogurt, vanilla and honey.

Add the dry ingredients to the moist ingredients and add the egg. Do not mix too much.

Stir in the chocolate chips.

Pour the dough into the 9 buttered cups of the muffin pan.

Bake 18 to 22 minutes.
