I do not know if you are like me, but when there are warm temperatures and humidity, I would rather eat light meals than big heavy meals. Especially for dinner . . . I prefer salads with vegetables or a piece of grilled meat or fish with crunchy vegetables. This is so delicious !

The salad recipe we share with you today can be served for lunch at the office or as a side dish with a barbecue or during a summer picnic.

You can eat this salad like that or you can eat it with crackers or leaves of your favorite lettuce.

Fresh and tasty, you will love this salad from the first bite. Everyone will love this salad !

You will have no complaints about this salad, except : I want more !

INGREDIENTS TO MAKE THE POLLOCK SALAD:

- 250 g of pollock, diced

- 2 hard boiled eggs, diced

- 80 g mozzarella, diced

- 2 green onions, chopped

- 1 large tomato, seeded and diced

- 2 tbsp. corn

- 3 tbsp. mayonnaise

- Salt and ground black pepper

INSTRUCTIONS TO PREPARE THE POLLOCK SALAD :

  • Put all the ingredients in a large salad bowl and mix gently.
  • Salt and pepper generously.
  • Serve on beautiful Boston lettuce leaves and enjoy with crackers.
