Chicken is a lean meat that is appreciated by many people !

However, chicken breasts are not the most tasty part of the chicken and they can be dry. Here is a recipe that will allow you to never have tasteless chicken breasts on your table !

INGREDIENTS :

  • 4 boneless and skinless chicken breasts
  • 2 tbsp. Italian seasoning
  • 1 tsp. paprika
  • Salt and pepper, freshly ground

For the spinach and artichoke stuffing :

  • 120 g frozen spinach , thawed
  • 250 g cream cheese ( low fat ) , at room temperature
  • 170 g canned artichoke hearts, finely chopped
  • ½ cup shredded mozzarella cheese
  • ¼ cup Parmesan cheese, grated
  • 1 tbsp. garlic, chopped
  • Salt and pepper, freshly ground

For the sauce:

  • Remaining spinach and artichoke stuffing
  • 1 cup of whole milk

INSTRUCTIONS :

  • Place each chicken breast on a flat surface. Season both sides of the chicken breasts with the Italian seasoning, paprika, salt and pepper.
  • Press firmly on the chicken breast with one hand and cut a slit about ¾ of the way through ( do not cut all the way ).

For the spinach and artichoke stuffing :

  • Squeeze the spinach so that there is no more liquid.
  • In a medium-sized bowl, mix the spinach, cream cheese, artichokes, mozzarella cheese, parmesan cheese and garlic in a bowl. Mix well to combine. Salt and pepper generously.
  • Fill each slit with 1 or 2 tablespoons of spinach/artichoke stuffing, spreading evenly with the back of the spoon. Reserve the remaining stuffing for the sauce.
  • Close the chicken breasts with toothpicks to keep the stuffing inside during cooking.
  • Heat one tablespoon of oil in a skillet over medium-high heat.
  • Cook chicken breasts for about 8-9 minutes until golden.
  • Rotate and cook on the other side, covering the pan with a lid, about 8-9 minutes more. Keep aside.

For the sauce :

  • Pour the milk in the same pan.
  • Simmer gently.
  • Add in the remaining dip ( you should have exactly half remaining ), and stir until sauce is combined and thickened.
  • You can add salt and pepper if you want.
  • Add the chicken back into the pan and serve.
