Banana bread and carrot cake are probably the two most liked dessert. They are not overly sweet and are easy to make. If you too enjoy these two treats, you should try this recipe by Delish, a combination of banana bread and carrot cake! The result looks so good! It will become a favourite in your family. INGREDIENTS

FOR THE BANANA BREAD

  • Cooking spray
  • 1/2 c. melted butter
  • 3/4 c. sugar
  • 1/2 c. brown sugar
  • 2 large eggs
  • 1/4 c. whole milk
  • 1 tsp. pure vanilla extract
  • 2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. kosher salt
  • 1/4 tsp. ground nutmeg
  • 3 large ripe bananas, mashed
  • 1/4 c. grated carrots
  • 1/4 c. chopped pecans  (more for garnish)

FOR THE FROSTING

  • 8 oz. Philadelphia or your favourite brand of cream cheese
  • 1 c. softened butter
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • 1/2 c. powdered sugar

DIRECTIONS

  1. Prepare a 9"-x-5" loaf pan with cooking spray and line with parchment paper. Preheat the oven to 350º. 
  2. In a large mixing bowl, stir together the butter and sugars until its well combined. Add the eggs, milk, and vanilla and mix until its combined. Slowly add in flour, baking powder, baking soda, cinnamon, salt, and nutmeg and stir until its fully incorporated. Gently fold in bananas, carrots, and pecans and mix until fully combined, do not over-mix.
  3. Pour the batter into the prepared pan from step 1 and smooth the top using a spatula. 
  4. Bake for about 1 hour or until a toothpick comes out with moist crumbs. Let the cake cool down.
  5. To make frosting, beat the cream cheese and butter  in a large bowl using a hand mixer. You can also use a stand mixer. Then, add in the vanilla, salt, and powdered sugar and beat until the frosting is fluffy.
  6. Once its cool down, frost the bread and garnish the top with pecans.
