Do you want some chocolate muffin, but you do not want a fat, and unhealthy muffin ?

You have to try this recipe, a triple chocolate zucchini muffins !

What's so special about this recipe ? It contains no dairy products or butter. And you will only need a very small amount of oil.

Ultra easy to make, these muffins do not taste at all the zucchini ! They have such a delicious chocolate taste that no one will discover your little secret.

Ingredients :

  • 1 cup (250 ml) finely grated zucchini (about 1 medium sized zucchini)
  • 1 cup (115 g) all-purpose flour
  • 3/4 cup (170 g) granulated sugar
  • 1/3 cup (37 g) cocoa powder, unsweetened
  • 1 teaspoon (5 ml) baking soda
  • 1/4 teaspoon (1.25 ml) salt, or to taste
  • 1 large egg
  • 1/2 cup of dark chocolate soy milk (Silk Soy, Almond, or Coconutmilk, or chocolate milk, may be substituted)
  • 2 teaspoons (10 ml) white vinegar
  • 1/4 cup (65 ml) canola oil or vegetable oil
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup (125 ml) boiling water
  • 1/2 cup (125 mL) semi-sweet chocolate mini-chips
  • about 12 teaspoons (60 ml) semi-sweet chocolate mini-chips, divided

Preparation :

Preheat the oven to 350 ° F (180 ° C).

Line a muffin pan with paper liners.

Grate the zucchini very finely. Set aside.

In a large bowl, add flour, sugar, cocoa powder, baking soda, salt and mix. Set aside.

In a medium bowl, add egg, dark chocolate soy milk, vinegar, oil, vanilla and whisk ingredients.

Pour the wet ingredients over the dry ingredients and mix.

Add the zucchini and stir gently to combine the ingredients.

Add boiling water and stir to combine.

Add 1/2 cup of chocolate mini-chips and mix.

Fill each muffin liner 3/4 full.

Evenly top each muffin with a generous pinch of mini chocolate chips, about 1 teaspoon per muffin.

Bake for about 20 minutes or until the tops are domed.

Cool muffins in pan on a wire rack for about 10 to 15 minutes or until you can remove them.

Serve.

Notes : 

Muffins can be stored at room temperature for 5 days in an airtight container or in the freezer for up to 4 months.
