Finding a recipe that the whole family will love is really hard - and finding an easy recipe is even harder! This slow cooker recipe is just perfect because it is creamy, cheesy and easy! You can easily adapt the recipe to what you currently have in your fridge and it will still be absolutely delicious! 



  • Cooking spray
  • 1 1/2 cups your favourite rice (long grain recommended) 
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1 1/2 pounds boneless chicken (thighs or breast) 
  • 3 cups low-sodium chicken broth
  • 1 tablespoon Dijon mustard
  • 2 ounces cream cheese 
  • Frozen peas and carrots (to taste) 
  • 1 cup shredded cheddar cheese (or your favourite cheese)


  1. This recipe works best with a slow cooker. Start by spraying the inside with cooking spray, set on high and add rice, garlic powder, onion powder, thyme, and salt. Stir well and add the chicken overtop. 
  2. In a small bowl, whisk chicken broth and mustard and pour over the chicken. 
  3. Cover and cook on high for about 3 1/2 to 4 hours or until rice is tender and chicken cooked through. 
  4. Add the peas, carrots and cream cheese. Stir well so the cheese starts to melt and then add cheddar on top. Cover and cook for an additional 10 to 15 minutes or until cheese is melted. Enjoy!
